Flavourful Forecast Trends 2012

New for 2012, the Flavour Forecast identified a number of global themes and revealed a surprising finding; that food lovers around the world have more in common than ever imagined.

One of the themes that emerged as common across the globe is that of ‘Flavourful Swaps’. By making simple changes to a recipe using ingredients with vibrant flavours chefs can offer dishes with lower salt or fat content, without any reduction in taste.

With all of us striving to eat more healthily following the indulgence of the festive season, McCormick’s Flavour Forecast 2012 has recognised that bold flavour combinations like Red Tea, Cinnamon and Plum, and Grapefruit and Red Pepper can help us to eat well, whilst still enjoying some exciting flavours; these have been demonstrated in recipes such as Cuban Grilled Chicken with Salsa Fresca, Grilled Oysters with Grapefruit & Red Pepper Relish, Red Tea-Smoked Sea Bass with Cinnamon Caramelised Plums and Roasted Pork Tenderloin with Cinnamon-Plum Stuffing.

RED TEA WITH CINNAMON & PLUM

BETTER-FOR-YOU BEVERAGE MEETS FRUIT AND SPICE. Known as rooibos in its native South Africa, caffeine-free red tea has a nutty taste and deep auburn colour.
